Pipe Organs have brakes and gas pedals too, just slightly more sophisticated!
Expression pedals are operated by organists' feet to vary volume and color of a pipe organ. Two of the four organ divisions will be in "boxes" or enclosures with wood shades. When the shades are shut, the pipes are in another room, per se, than the church and are softer. There is also a programmable crescendo pedal which automatically turns on and off stops from none to full organ.
